Sweet Southern cornbread

One of my favorite foods that I've discovered when I moved to the south is cornbread.  I never imagined how many different ways you can enjoy this simple little bread.  We have a restaurant called 131 Main here in North Carolina, they are known for their amazing grilled artichokes and their sweet cornbread.  It oozes with sweet butter and brown sugar.  I make a cornbread casserole that has some of the ingredients that I have chosen to put in my recipe.  Those ingredients along with my take on 131 Main's amazing cornbread makes this so moist and sweet, it could even be a dessert!  Enjoy!

Yields: 1 loaf

1 egg
1/3 c. milk
1 8.5 oz. package of corn muffin mix
1/4 c. sour cream
1/3 c. green chilies
1/3 c. can creamed corn
1/2 c. brown sugar
3 T. butter
3 T. honey
1 medium chopped onion

Preheat oven to 375.
In small saute pan combine 1 T. butter and chopped onion, add salt and pepper to taste and cook on medium until transparent.  (about 5-10 minutes)  set aside.

In medium mixing bowl add muffin mix, sour cream, chilies and creamed corn.  Mix in cooked onions and stir it all together.  Pour into greased bread pan.  Chop  remaining butter  in small pieces and place all over the top of mixture along with 1/2 the brown sugar.   Bake at 375 until cooked through, approximately 20 - 25 minutes.  When bread is done baking drizzle top with honey and remaining brown sugar.  Let cool and serve.
