Nanette's diet soup
This vegetable soup recipe is an almost 0 point weight watcher soup. It is loaded with healthy vegetables and a fat free beef broth. You can eat this all day long every day and watch the pounds shed off of you. Because it is loaded with fiber and great nutrients it keeps you full and satisfied. The flavor makes this so tasty, you will never feel like you are sacrificing anything. Enjoy!
Yields: lg. pot
2T. olive oil
5 cloves garlic
1 medium onion
1 c. chopped celery
1/2 chopped green pepper
1/2 chopped orange pepper
1 cubed medium zucchini
1 c. bean sprouts
1 small package of mixed frozen vegetables
3 medium chopped potatoes
2 c. chopped cabbage
1 c. edamame shelled ( frozen is fine too)
1 lg. can crushed tomato
1/2 t. thyme
salt and pepper to taste
cayenne pepper to taste for some heat ( I added about 1/4 t. )
1 T. worcestershire sauce ( more to taste if you like)
3 32 oz. containers of Beef broth
In large soup pot add olive oil and onion, celery and garlic and cook until transparent. Continue to add all the vetetables. Add beef broth and crushed tomato. Season with all seasonings and let cook slow for 3 hours or longer to allow all ingredients to cook through and absorb all the flavors. Enjoy all week long!
