Poblano and queso burger


Yields:  4 burgers

My husband is a big fan of Poblano peppers.  His favorite Mexican treat is a stuffed poblano pepper.  I decided to make Santa Fe burgers with his favorite pepper and homemade queso sauce.  The queso is so easy to make, you'll never buy it again.  Enjoy!

1 lb of ground beef
2 large Poblano peppers
2 cloves garlic
salt and pepper
4 crusty hamburger buns
3 T. olive oil

Queso sauce:

1 T. butter
1 T. flour
1/2 c half and half
1 c. skim milk
8 ounces of  Monterey Jack cheese
salt and pepper
1t. garlic powder
1 small can of green chilis is optional

Cut Poblano peppers in thirds and remove seeds.  Put peppers and garlic in small roasting dish, add olive oil and salt and pepper.  Cover the dish in foil to roast the peppers.  Roast for 30 min. at 375 degrees.

Form 4 patties with the ground beef, salt and pepper both sides of burgers for taste.  Grill to desired temperature.  Put aside

In medium sauce pan melt the butter over medium heat.  Whisk in flour and cook for 1 minute.  Add the milk and the half and half whisking constantly to combine and thicken.  About 5 min.  Remove from heat and add cheese, and season with salt and pepper.  (add optional chilis now too).

Toast bun on grill.  Add burger, roasted pepper and drizzle queso on top. Serve and Enjoy!
