Broccoli and garlic stuffed bread




Yields: 2 large loaves

Many of you are already familiar with my stuffed bread recipes.  This is another delicious combination of vegetables that make for a wonderful stuffed bread.  If you have a broccoli hater in your home, I would highly encourage you to make this recipe and watch how they become a broccoli lover!  Enjoy!

1 package of pizza dough ( can purchase at any pizza shop or in your grocery store).
2 heads of broccoli
1 large. onion
3T. olive oil , split into 2 T. and 1 T.
2 T. minced garlic
12 - 14 mushrooms
12 oz. mozzarella cheese (fresh is preferable)
12 oz. bag of mixed Italian cheeses shredded ( ie:  Fontina, Asiago, Provolone, Parmesan, ).
1/2 cup grated Parmesan cheese
1 egg
salt, pepper, basil, oregano and red pepper flakes to taste

Saute onion in 2 T.olive oil.  Once onions are tender add the garlic.  Cook until onions are transparent.  Add broccoli and mushrooms, cook to desired texture.  Add salt, pepper, basil, oregano and red pepper flakes to taste.  Remove pan from heat and put mixture aside.  Cut your pizza dough in half and roll each out on a floured surface.  ( do not over-flour the dough as it will get tough)  Sprinkle dough with 1 T of remaining olive oil and add cheeses one layer at a time.  Add broccoli and vegetable mixture.  Sprinkle Parmesan cheese on top. Roll like a jelly roll and place on lightly greased cookie sheet.  Scramble the egg in small bowl and brush on top of the rolled dough for a shiny coating.  Enjoy!
