Tomato, Avocado Tower Con Queso

Summer salads can come in many flavors, this Tomato Tower was inspired from the classic Caprese salad.  I decided it was time for a dressed up version with different flavors.  Tomatoes are so fresh and full flavored this time of year, eat them up!  I combined the Avocado, tomato, fresh basil and chives along with a fresh buttermilk dressing and Queso crumbles.  This would be a great meal on it's own with some fresh hot bread and olive oil, or a perfect side dish for a Grilled steak, chicken, pork, or fish!  We had this with a grilled rib eye that I made a special mushroom saute on top....Look for that recipe along with a special corn cob with queso creme butter.  DELISH, and perfect for your next cook out!  CHANGE It up PEOPLE!

 HAVE FUN WITH YOUR FOOD!

Ingredients:

Two large Beefsteak tomatoes
1 avocado
1/2 c. queso mexican crumble cheese
1/2 c. chopped basil
1 T. chopped chives
grape yellow tomatoes

Dressing:
1c.light buttermilk
1/2 c. sour cream
1T. cider vinegar
1T. chopped parsley
1t. chopped fresh dill
1T. chopped fresh garlic
salt and pepper to taste
1/2 t. dry oregano
cayenne pepper to your taste (optional)
juice of 1/2 lemon and zest of whole lemon

Mix all dressing ingredients together and refrigerate for 1 hour. 

Cut tomato in 1/2 inch thick slices, slice avocado in slices and layer tomato, then avocado put a little dressing on each layer, continue to layer until you have used the whole tomato and as much avocado as you need. Top tower with buttermilk dressing and queso crumble cheese.  Garnish with chives, basil and other yellow tomatoes. Enjoy!
