SUMMER Blueberry, Mango, Whole Grain Pancakes with Orange, Pecan butter sauce!
Oh My Goodness! These are a must have this Sat. or Sun. morning for your favorite pancake lover! They will never forget this delectable, non guilty Pancake and the amazing, bright, sweet flavors that pop in your mouth bite after bite! I'm not a pancake lover, but, this dish is a favorite of mine and I eat every bite! Give this a try!
Ingredients:
11/2 t. salt
4 T. sugar
1/2 c. blueberries
1/2 c. chopped mango
1 T. ground flax seed
1 T. wheat Germ
1/2 T. baking powder
1/1/2 c.whole wheat flour or regular all purpose flour
2 eggs
2 t. vanilla
juice of one fresh orange and the zest of one fresh orange
2 c. light buttermilk
Sauce:
1/2 stick butter
1/2 c. chopped pecans
1 T, of the orange zest and 1T. of the juice of the orange
1/4 c. brown sugar
2T. Agave nectar or your favorite syrup........I use agave nectar and love it!
Mix together the dry ingredients in a bowl. Add all wet ingredients to the dry and mix well. Cut up all mango and add mango and blueberries and gently fold them into all the wet and dry mixture. Cook on stove top grill or pan on medium heat until golden brown and cooked through.
In another small pan mix the sauce ingredients to warm and combined, pour over your pancakes and EAT! ENJOY! This is a treat for sure!
