EASY....PORK TENDERLOIN WITH CORN CAKES AND TOMATO, GREEN ONION SALSA......................

Some hot summer days make you want EASY and tasty dishes that are fun and not a lot of effort! So simple...for anyone! I love pork tenderloin, it is a tender, juicy loin and it cooks up quickly and with ease! It is a perfect quick summer must! I season the pork towards a barbeque, cuban flair......( see ingredients), then I add a side dish of a MOST inexpensive and delicious corn pancake with fresh corn on the cob and fresh cut tomatoes and green onions.......this is so light, refreshing and full flavored! I would so do this for a quick 30 minute meal any night of the week!!!!!!!! FUN for kiddos too! I'll show you why! feeds 4 easily!

Ingredients:

1 small pork tenderloin ..about 1/2 lb. or more
salt and pepper to taste for tenderloin with olive oil
1 t. coriander or mojo seasoning
1/2 lime zested and the juice of
1/2 t. cumin rubbed all over the tenderloin!
1 lime
1T. dijon mustard
1/4 c. favorite barbeque sauce!

Corn Cakes:

1/2 can of creamed corn
1/2 c. sour cream
1 box jiffy corn muffin mix
1/2 c. half and half
1 corn cobb of corn
1 medium onion sauteed in 2 T. butter salted and peppered until tender
11/2 t. garlic powder
3/4 c. of goat cheese or cheddar..your choice
salt and pepper batter
4 slices of bacon cooked

topping:

1 whole medium to large tomato chopped
1 whole green onion or 1/4 c. red onion chopped
salt and pepper to taste
1T. balsamic vinegar
1T. olive oil

1/4 c. sour cream.....................seperate as a garnich with chopped chives.....



Directions for Pork:

Salt and pepper tenderloin, sear in 1T. olive oil on all sides on medium high heat. When browned all all sides, sprinkle coriander all around pork and cumin and lime and cover in foil wrap and bake at 350 for 35 minutes or until 145 in temp.

Directions for the corn cakes:

In medium mixing bowl mix all the ingredients well...................grease skillet and pour 1/4 c. of batter on pan for each cake and cook like a pancake on medium heat until golden brown...place on a cookie sheet when done.

Directions for topping:

Mix all ingredients together and let rest for 15 minutes in refrigerator.
chop chives for garnish.

While your pork cooks prepare the corn cakes, ...set aside and prepare tomato topping. When Pork is done....let rest for 10 minutes.

Slice pork into 1/2 inch medallions top with 2 T. of your favorite barbeque sauce and 2 T. Dijon mustard,,,rub all over the pork................serve with 3 to 4 stacked corn cakes topped with tomato topping and a dollop of sour cream!

** FOR KIDS..................Serve the corn cakes as a tortilla or a pig in a blanket and wrap the pancake around the pork! FUN!
