Stuffed mexican flag chicken enchilada bread
Today is the Super Bowl and I am heading to my neighbors house. I cannot go empty handed. Since a lot of you are making my Bacon Cheeseburger bread, I decided to mix it up a bit with a Mexican bread. This recipe is easy and very tasty.
1 pizza dough
1 c. chopped onions
1/2 green pepper chopped
1/2 red pepper chopped
1/2 yellow pepper chopped
1 can drained and rinsed black beans
2 c. mexican cheese mix
3 c. shredded or cubed chicken
1 packet of Chipotle taco seasonings ( if you cannot find this, use your favorite taco one )
3/4 c. water
4 oz. enchilada sauce
salt and pepper to taste
1 egg
1/2 c. black olives (optional)
1/2 c. green onions (optional for garnish)
1/2 c. sour cream ( optional for garnish)
In a medium saute pan, saute onions; then add chopped green pepper, red pepper, and yellow pepper. Cook these through. Salt and pepper to taste. Add in chicken, black beans and combine. Add in the taco seasonings mix and 3/4 c. water to mix it together. Let this cook together for 3 minutes and then add in the enchilada sauce. Cook to reduce liquid for 3 more minutes on medium high. At this point you can add in black olives if you wish. To finish add 2 c. of the mixed mexican cheese and stir to melt. Set aside.
Roll out your pizza dough on a floured surface. Do not roll too thin. Top dough with your stuffing and roll up like a jelly roll. Transfer carefully to a greased cookie sheet. Mix up the egg in a bowl and brush onto the bread. Bake on 350 for 45 minutes. Enjoy.
