Chicken pot pie

Chicken pot pie is another comfort food for all of you stuck in the snow!  Everyone in the family will love it.  You can make my Italian wedding soup and a chicken pot pie to help get you through the snow bound evenings!  A great way for moms to keep the kids busy when snowed in:  Get them involved in making the meatballs of the soup.  They can help with this pie too....Have fun and cook with your kids.   Enjoy.

Chicken prepared as said in my Italian wedding soup recipe
3 boned in chicken breasts with skin
2 T. olive oil
1/2 c. butter
1/2 c. flour
1 c. chopped onions
1/2 c. chopped celery
1/2 c. chopped carrots
salt and pepper to taste
2 cloves garlic minced
1 3/4 c chicken broth
2/3 c. milk
3 c.frozen, mixed vegetables
2 pie crusts
1 egg

Pour olive oil  in a medium saute pan. Saute onions, celery and carrots.  When cooked through, remove from pan.  Add butter to pan and  flour and stir on medium heat into a roux.  When a caramel color rich in color add broth and stir until thickened.  Add milk and continue to stir as it thickens.  Add in frozen vegetables, chicken and add back in the sauteed vegetable mixture all into sauce.  Let rest.
Add bottom pie crust to pie dish and poke with a fork, bake at 350 until light golden brown.  Remove from oven and add chicken and vegetable mixture to pie shell and top with the other pie shell.  Mix up the egg and brush the egg wash onto the pie shell.  Bake at 425 for 30 -35 minutes.  Enjoy!
