The Ultimate BBQ CHICKEN


SUMMER TIME!  We all love the idea of spending a hot summer day with friends having a barbecue!  Recently, I decided that with all my experience living in the South for the past 9 years, it was time to bottle my own sauce!  I have a whole bunch of taste buds that really love it sweet, spicy, savory and deep in flavor!  These little guys on my tongue are not the easiest to impress sometimes.  This was one of them!  I spent a lot of time composing this BBQ Symphony.  Needless to say, I really am pleased with the results and hopeful that your taste buds will sing with praise too!

Ingredients:

1 orange plus the zest
1/2 c. soy sauce
1T. minced garlic
1T. minced ginger
3T. rice wine vinegar
1 medium onion chopped fine
1t. or more to taste of Sriracha sauce ( Thai hot sauce)
1/4 c. brown sugar
1t. smoked paprika
1t. chili powder
1/4 c. wine, or Bourbon
1 star anise pod
1 c. baby cherry tomatoes whole
salt and pepper to taste
1/2 c. ketchup
1/4 c. molasses
2T. canola oil


Directions:

In medium saute pan heat up the canola oil and saute the onions. Cook for 4 minutes until transparent.  Add garlic and ginger.  Stir.  Add in the rest of the ingredients stirring after each additional item.  Simmer for 15 to 20 minutes, stirring and keeping a watchful eye on it.  The sauce will thicken and the tomatoes will burst, that is what you want.  Taste to make sure you have the right amount of salt and pepper.

Now bake your chicken of choice , I like to use chicken thighs!  I salt and pepper them and bake them in the oven for 25 minutes at 375, the skin will be crispy on top.  Add the sauce on top of each piece of chicken and put it back in the oven for 3 minutes to finish it off.  This is a sweet, salty, slightly spicy pop of flavor for sure!  ENJOY!
