Spinach Bread and Pepperoni Bread!



SPINACH BREAD AND PEPPERONI BREAD!

I have been raving about spinach and pepperoni bread all my life!  My grandmother made these little loaves for us EVERY Sunday for dinner EVERY week!  We never took these amazing breads for granted, but, since the days with my grandmother are now a memory, no one really makes these...so I DO!  The taste brings me back to those very special Sundays around her table eating dinner and sharing all our love in our very Italian way!  Lots of noise, laughter, and fun!

I think these breads can be changed out with any ingredients, We make this with sausage a lot too.  You can pretty much put anything in as your "Center"....use your imagination and change the cheese and meat or cheese and veggie!  This is great for a TAILGATE!  Easy to travel and a tummy filler!

These breads are a great hostess gift and a great appetizer too for a party too!  Keep in mind for the Holidays!  Take a peak!  THIS IS EASY!

Ingredients:

1 package of pizza dough from your grocery store!
1 frozen package of cooked spinach
1/4 lb. to 1/2 lb. sliced pepperoni luncheon meat
16 oz. shredded mozzarella cheese
2 T. garlic
2T. olive oil
1/2 c. grated parmesan cheese
1/2 c. flour

Herbs:
oregano, basil, salt and pepper, crushed red pepper

Cut pizza dough in half and preheat your oven to 375.
Roll out each dough to about 8x10 in.    To make the spinach bread,   In small saute pan, heat 1T. olive oil add drained and water less spinach, ( you need to squeeze out all the water in a tea towel until it is dry!). Add 1T. garlic minced, salt and pepper, a pinch of oregano, basil and crushed red pepper,,all to taste!  Cook for 2 min. to combine all flavors.  Spread out spinach mixture onto the rolled out dough and top with 1/4 c. parmesan cheese and 1c. of mozzarella cheese.  Roll tight like a jelly roll.  Paint the outside of the dough with a whisked egg wash and slice 4 slits on top of roll for ventilation.  Sprinkle with kosher salt. Bake at 375 until golden brown,, approx. 30 minutes.

The Pepperoni bread is the same except you are adding the slices of pepperoni layering all over the dough, top with parmesan cheese and mozzarella cheese and the dried herbs to taste as well.  If you like you could put a favorite tomato sauce on the dough first,,but, I like it plain and simple!  ENJOY!
