Caramelized Onion, Mushroom, Roasted Garlic, and Bacon Gorgonzola Tart!


This Tart is one of those dishes that can really smack your guests in the face with HUGE flavor and is very impressive!  I love this in the winter especially because it is very rich.  I have made this with Goat cheese too...but, when you are making a filet or lamb or Veal...these are meats that sing an Opera to the audience of FLAVOR and Drama which is this tart in a whole!
The only problem with this tart is that you will be asked to make it a lot! ;)


Ingredients:

I pie shell or homemade pie shell
2 large onions sliced and caramelized in butter, olive oil and salt and pepper
1 large container of mushrooms,,,chop and saute in 1 T. olive oil and 1T butter
3 slices of bacon lardons cooked fully ( basically sliced)
1/2 c. crumbled Gorgonzola
3T. olive oil
3 T. butter
1 whole roasted garlic head ( roast one head of garlic in 400 degree oven, cut top of garlic head off and reveal the garlic, put into foil and top with 1 T. olive oil and a large pinch of kosher salt, now bake at 400 for 20 to 30 minutes).


Roast garlic as instructed.
In medium saute pan, add 1 T. olive oil and 1T. butter and saute chopped mushrooms and salt and pepper to taste.
Put bacon on a cookie sheet and cook until done in 400 degree oven.
Put pie crust into tart pan or pie pan.

Saute onion in 1T. butter and 1T. olive oil and salt and pepper.

After the bacon and garlic and onions, and mushrooms are done add one at a time to the pie shell.  I add the onions first and spread them all over the shell, then add bacon, follow with mushrooms, I squeeze the garlic head and allow all the cloves to fall out..then I chop them and add them to my tart...this is real strong flavor, so spread out evenly.  Then and finally, add the Gorgonzola.

Bake at 400 for 20 to 30 minutes until crust is bronzed and ingredients are married together. Drizzle with Black truffle oil and serve.

Keep a healthy distance from your guests eating this,,,they might attack you!  Just a warning!
