TOMATO BASIL SUMMER SALAD



TOMATO BASIL SUMMER SALAD:

This is my "go to" salad this time of year when the Tomatoes are Perfection on a vine!  As you approach this Labor Day weekend take advantage of these amazing seasonal tomatoes, mix it up with a variety of them.  I love Heirloom of all sizes, shapes, and colors!  Add fresh Basil, Red onion slices and Garlic and  your almost to my Favorite summer salad!  The finishing touch is in the dressing!  Take a look and make this to go with one of my Burger ideas!  If your not into burgers, no worries, this salad goes with ALL FOOD!  ENJOY!

Ingredients:                                                                                                                     Yields: 4 servings

5 cups chopped Fresh Ripe tomatoes,,all kinds, whatever you can find...I like Heirloom.
1/2 red onion sliced thin
1c. fresh basil leaves....do not chop them,,,you can tear though if they are large.  Chopping bruises the leaf and I think makes it bitter in a salad!
1 T. chopped or minced garlic
1/2 c. Extra Virgin olive oil
1/4 c. Balsamic vinegar
1t. salt and 1t. pepper or to taste
1t. dried oregano flakes
dry red pepper flakes to taste........this is optional...but, I use it!

In medium bowl mix tomatoes, onions, basil leaves ...salt and pepper the veggies to taste.

In small bowl mix in the dried oregano, salt and pepper, balsamic vinegar, garlic, red pepper flakes, and then whisk in the olive oil.

Pour the dressing over the salad and toss and serve!  ENJOY!
