Creamy Cheesy Potato Casserole



CREAMY CHEESY POTATO CASSEROLE:

It was a blustery day anticipating Hurricane Isaac's arrival, I needed some comfort food!  We just moved to Florida during Hurricane season and our first Hurricane was coming our way.  Living in a High Rise Condo temporarily on the 17th floor and being deathly afraid of heights...............I found myself spending a lot of time channeling my comfort zone in the KITCHEN of course!  I bought a big Honey baked Ham because I had to have my favorite potato dish..........CARBS were in order!
Every Easter my mother in law makes a ham and this potato dish that she calls, "Nana's Potatoes," because the recipe in her heart came from her mother.  I changed a few things and you could tailor this dish to your preference too, just follow the basic directions and any other addition would be amazing.  You will see!

Next time you need a potato dish or covered dish to bring to a party..............Give this a whirl..it's soooo easy, and a big Hit all the time!  ENJOY!

Ingredients:

1 bag of Ore Ida home fries.......( little cubed potatoes)
2 cans of cream of potato soup
1 can of cream of celery
1 can of half and half
1 bag or 12 oz. or more to your taste of shredded cheddar cheese
1 cup of sour cream
1 chopped onion sauteed in 2T. butter until tender...salt and pepper to taste.
1t. garlic powder
salt and pepper to taste!

Grease 13x9 Pyrex baking dish and preheat the oven to 375.  In medium bowl combine all three soups and can of half and half and whisk well.  Set aside.

In greased pan combine all ingredients plus medium bowl of soups and cream.  Mix well and now all you do is BAKE on 375 for 1 hour.................keep an eye on it.  The top will appear as in the picture, golden brown and the casserole will be bubbling.
Allow it to rest for at least 10 minutes and serve!

** I think this would be great too if you changed the cheese to Gruyere or your favorite Italian cheese like fontina?  Also, you could use cheese soup or cream of chicken for a change!  If you wanted this Mexican, add green chilies, lots of Colby jack and possibly some salsa or jalapenos on top with sour cream when you serve it!  This recipe is a chameleon!
