Beer-Marinated New York Strip Steak

 Yields: 6 servings

1/4 cup soy sauce
1t. fresh chopped thyme
2 T. olive oil
3 large garlic cloves, minced
2 t. Dijon mustard
2 t. chopped fresh rosemary
2 t. Worcestershire sauce
2 t. coarsley ground black pepper
1/2 cup dark lager beer (Sam Adams)
2 1/2 lbs New York Strip Steak
Non stick vegetable oil spray

Whisk first 7 ingredients in medium bowl, then whisk in beer.  Pour marinade into large ziploc bag.  Add steaks, seal bag and chill 1 day (turning bag occasionally).

Spray large skillet or grill pan with non stick spray and heat over medium high heat.  Remove steaks from marinade and pat dry; discard marinade.
Place steaks in hot skillet and cook until well browned, or until cooked to your preference of temperature.  Transfer steaks to carving board, and let rest for 5 minutes before cutting.
Slice steaks thinly across grain.  Arrange on patter, spoon any accumulated juices over and ENJOY!
