Goodbye Caprese! HELLO Tomato Tower! Celebrate the TOMATO!!!!!!!!!


TOMATO GOAT CHEESE AND PESTO TOWER!



Hello everyone!  It has been a while since I have posted a recipe.  Where have I been, what have I been doing if I am not in the kitchen?  Well, the answer is I miss my kitchen, but, not for long.  I have been extremely involved in building our new home in Florida...this involves a kitchen of course!  It also involved me selecting all fabrics, wall coverings, bedding and beds, all decor and color palates for our new Cielo Home!  We have been in up to our ears in fabrics and making very important lasting decisions.  Nerve racking is an understatement.  haha.  This recipe is the best summer salad that I have been making during all those quick night meals as we have been so busy and need a quick, light, refreshing salad!  I guarantee you will say Goodbye to the Caprese salad, and Hello to the Tomato Tower!!!!!!!

This is the perfect time of year to use up all those beautiful, sweet juicy tomatoes from our gardens.  The tomato tower is layers of delicious, and bright flavors that are surprises that will make you sure to go in for a second bite!  The layers start with a large ripe thick tomato slice, next layer is goat cheese ( chevre), topped with another layer of tomato, topped with fresh pesto sauce, topped with cooked or roasted beet slices, ( if you don't like beets, as all of us do not, replace this layer with hearts of palm or artichoke hearts). you top the beets off with a little more cheese, pesto and chopped tomato is your cherry on top of this sundae!  The dressing is balsamic and olive oil drizzled all over the towers, don't forget to salt and pepper these bad boys, that brings out all the sugars and sweetness of the tomatoes!

That is the recipe,,,no big instructions on this one friends, just put it all together and make your tomato tower a part of your next creation!  You will be sure to impress, and you will love that you did not have to work hard.  So cool off as the summer comes to a close and enjoy those last sweet juicy tomatoes of the season!
