Firecracker Gazpacho!

FIRECRACKER GAZPACHO!



Summer is HERE!  So is the 4th of July!  In honor of the fourth of July, I decided to make a spicy gazpacho.  This is the perfect summer soup with crunchy, fresh vegetables and tasty garnishes, you can eat all of this for NO GUILT!  0 to 2 pts. on weight watchers and little to no calories!  I think this also could make a great drink with lots of crunch with a splash or two of vodka, after all, I love to EAT my bloody Mary's!  

I made this in honor of my long time friend Diane who has had a rough year,,but, I know loves her bloody Mary's the way I do!  ENJOY Di,,,!  Thinking of you! :) Cheers!

Ingredients:

5 plum tomatoes chopped 
1 bottle of Spicy V8 juice
2T. of minced garlic in a jar
1 dill pickle and 1/4 pickle juice
4 large Spanish olives
1 hot house cucumber seeded and chopped
2 stalks of celery chopped
1 lemon juiced and 1 lime juiced
2 T. plus as taste salt
2 t. plus as taste pepper
2 T. horseradish
1 red onion chopped
1/4 c. champagne vinegar
1 red bell pepper chopped
cayenne pepper to taste...careful here!  ( Do a little at a time..you can always add, but, not take away! ).
Tabasco to taste and Worcestershire sauce, about 5 splashes.

Kosher salt and cayenne pepper mixed for rim of glass and any garnishes you want, I chose a lime, celery stalk, pickle, olive, pepperincini and pickled okra............a chunk of cheese or a slice of bacon are great other ideas! :)  YUM!

Directions:  In large bowl dump your spicy V8 in.  Now start to rough chop all the ingredients one by one and one by one pulse to a more fine texture in a blender or small Cuisinart.  After each item is pulsed in the Cuisinart, add it to the bowl.  Add all seasonings and mix well.  Now, refrigerate overnight or at least for 6 hours.  The longer the better.  Serve and love!
