Mushroom and leek quiche with Gruyere cheese!



MUSHROOM AND LEEK QUICHE WITH GRUYERE CHEESE!

NANETTE'S TABLE was known for the weekly quiche!  I made a different quiche recipe every week and inevitably ran out by mid week so I had to start making more and more!  Quiche is something that most of us love to eat, and rarely get the chance to do so.  It is a classic great dish.  The most popular cheese I used in quiche was Gruyere!  The other popular ingredients were  mushrooms and leeks!  The combination of all of these ingredients makes a great rich and delicious quiche.
The best part about a quiche si that it is good for ANY meal!  Breakfast, lunch, brunch or dinner!!!!!!!! It can also be put into mini muffin tins and become a great party appetizer!  This recipe I am sharing is a BIG secret.  I cannot believe I am sharing it!  BUT, it has saved many fearful quiche lovers that were afraid to tackle making one.  I also know this recipe saved many freinds with their weekend visitors..make two of these quiches and serve with fresh fruit and croissants, you will look like a gourmet chef!    You can take any of your favorite foods and  add any veggie or meat to the "base" recipe!  Try it and see why!

Ingredients: and "BASE RECIPE"!

2T. flour
1c. milk or half and half or cream,,,your choice..
1c. mayonnaise ( I used Hellmans light)
2 to 3 eggs
salt and pepper to taste

**1 pie shell

Personality:.........this is the flavor part and it can be any veggie or meat or combo plus cheese!

1c. chopped and cleaned leeks
2 c. chopped mushrooms
1T. garlic
salt and pepper
1 c. shredded gruyere cheese
1T. worchestershire sauce
2 T. olive oil

Heat oven to 375.  Add all Base recipe ingredients into a mixing bowl and whisk well.

In medium saute pan add 2T. olive oil and heat on medium high.  Add chopped leeks and mushrooms, salt and pepper to taste, garlic and stir cooking until cooked through, about 8 minutes.

Add pie shell to pie dish, I spray a canola oil spray or olive oil spray to pie pan to prevent sticking.  Add mushroom and leek mixture to bottom of shell.  Add in the shredded cheese, and top with the "base mix".  Bake at 350 until golden brown and cooked through,,,you will see the top crack a bit.   30 to 40 min. usually to cook depending on your oven.    ENJOY!
